For consumer, the amount of sulfite in the wine is of a great concern for many reasons. Due to a very favorable combination of acid, alkalinity and tannins, we were able to eliminate the use of sulfites altogether. The result is a smooth wine with light aroma of cherry fruit, licorice, and a touch of spice - mainly clove. This harvest was very demanding, due to long and hot summer, yet the grapes showed remarkable fortitude. Flavors, fragrances and deep tannins dominating the palette.
