In the preface to his famous book, "Wine, From Heaven on Earth,"
French bio-dynamic winemaker, Nicholas Joly, writes the following: "Bio-dynamic, wakes up in some the uncritical admiration, categorical dismissal in others, and yet an absolute misunderstanding in most. Why is this? The answer reflects the damage of our manipulated society.
Beaver Creek uses the biodynamic process to bring nature back in to balance. While biodynamic is not a method, moreover a direction, with which we use to create an outstanding, original wine, becoming an expression of harmony between vines and winemaker.
Just one look in a commercial vineyard and an organic vineyard and it's plain to see the difference: dead soil, void of any micro creatures, bugs, limited vegetation, vines fortified by artificial fertilizers, sprayed by artificial herbicides with nearly a trace of anything resembling personal attention. Such is the story of a normal commercial vineyard. On the other hand, in an organic vineyard, rich in micro organisms, bugs and animals grazing on a variety of different plants enrich the soil and the vines. Personal attention with a sense of unity or 'wholeness', as per our universe, creates a vineyard that is able to naturally express itself. In light of this, the wines don't bear the 'prescribed' taste and flavor of many others: our wines are original.
We don't create our wines in the laboratory. The fragrance and taste of our wine is given only by the elements of nature. We use natural yeast, no filtration and the absolute minimum of sulfites. People sensitive to sulfites or any similar additives will notice that they are not affected by our wine.
